An Exciting Industry-Designed Culinary and Hotel Program

We offer two different concentrations: culinary arts and hotel management. In the culinary arts, you will learn about kitchen and food preparation, knife practice, basic dessert and meal preparation, which will help you develop the primary skills needed by culinary professionals. And in hotel management, you will learn about hotel business models, human resource management, employee service behavior, and marketing and public relations management, which will help you develop the primary skills needed by hotel management professionals.

Moreover, you will find yourself immersed in classes that teach you about consumer psychology, health and safety regulations, customer service management, Chinese, Japanese and Western cuisine, and so much more. Initially, you will learn about the basics that go into restaurant and hotel businesses, but as you get more knowledgeable, you will begin to put the theory into practice. First in the classroom, but then during on-campus, off-campus and international internships.

The accumulation of real-life experience will help you learn all the practical skills you need to become a chef and hotel manager before graduation. By combining theory and practical hands-on experience, you will learn everything that you need to know to cook many different meals and cuisines, and how to manage employees and a hotel altogether. See what our program can offer you.

About the Department

Here in Taiwan, major shifts in the economy throughout the 1990s opened various opportunities for job seekers and students. More specifically, Taiwan’s economic development shifted its focus from primary and secondary industries to the service industries, particularly in the fields of dining and tourism. So, in 1999, in response to the growing demand for professionals in the hospitality, tourism, and culinary industries, the Department of Culinary Arts and Hotel Management was established at Hungkuang University.

In 2006, recognizing the importance of a tailored education, our department expanded its course offerings to include specialized modules such as Asian culinary arts, Western culinary arts, and hospitality services for first-year students. We aimed to enhance students’ practical skills and adaptability within diverse sectors of the hospitality industry. And over the years, our department underwent further developments, including establishing a two-year program in hospitality management, and offering two tracks in hospitality and culinary arts to our students.

Here at the Department of Culinary Arts and Hotel Management, we have cultivated so many outstanding students that we have received the Vocational Education Stars Award from the Ministry of Education for six consecutive years. And part of the reason for this is because we have established a high-quality learning environment that includes wine tasting, mixology, culinary arts, Asian cuisine, Western cuisine, and baking labs, as well as practical facilities such as a cocktail bar, a casual dining outlet, an internship restaurant, and a hotel. This immersive industry setting serves to narrow the gap between learning and application.

In summary, the history of the Department of Culinary Arts and Hotel Management reflects its evolution in response to economic shifts, industry demands, and a commitment to providing students with a comprehensive and tailored education in the dynamic field of hospitality. So, the next time that you wonder about where world-class chefs and high-quality hotel managers learned their discipline and skills, think of us here in the Department of Culinary Arts and Hotel Management.
