The Department of Culinary Arts and Hotel Management aims not only to train you in theory and hands-on practice in the classroom, but also to cultivate practical hands-on experience through on-campus and overseas internships too. This program will provide you with food handling, food preparation and culinary skills, as well as hotel management and human resource skills, you will need to become a culinary and hotel management professional.

A Hands-On Culinary Arts and Hotel Management Program

We offer you a chance to learn the skills you need to become a [list 2-3 jobs], and much more. Our program will help you to develop the technical skills and know-how that goes into everything from prepping the kitchen and preparing your ingredients to culinary techniques and food presentation; and housekeeping practices, health and safety regulations, and hotel management.

Our innovative classrooms emphasize theory and hands-on learning, you will learn the many techniques and skills that are needed to cook high-quality Asian and Western meals, to manage a hotel, to prepare coffee and tea, know health and safety regulations, and so much more, in classrooms that emulate restaurant and hotel environments.

 

Moreover, with the experience of taking part in on-campus internships at the HK restaurant, the More Fun Express, the Red Master Bakery, and the Liu Lu Training Hotel; as well taking part in internships overseas, you will feel confident in your ability to fulfill the roles and responsibilities of a chef or hotel staff member before you graduate.

Taught by Michelin-starred chefs and international experts who have decades of experience in hotel management, restaurant management, and culinary techniques from diverse countries, our program is designed to provide you with theory and on-the-job experience as [list four jobs], and more, before you leave Hungkuang University.

Internship Requirement

The on-campus internships (2.0 credits/approximately 36 hours per semester) are primarily designed to assist you in acclimating to the workplace. This is scheduled as hours to be fulfilled during class time during your second year, it is a mandatory course for all Culinary Arts and Hotel Management students.

 

For students studying in the Hospitality concentration, this will be completed at either the HK Restaurant or the Liu Lu Training Hotel. For students studying in the Western Cuisine or Asian Cuisine concentrations, this will be completed at either the HK Restaurant, the More Fun Express, or the Red Master Bakery.

 

Furthermore, you will all be required to take part in a professional or overseas internship (18.0 credits/approximately ) during your fourth year at Hungkuang University. This is scheduled as your fourth-year class hours, and it is a mandatory requirement for all Culinary Arts and Hotel Management students.

 

Our off-campus Taiwan internships can include international tourist hotels, chain restaurant groups, and Michelin-starred restaurants. Our overseas internships can find you in countries such as Italy, Australia, Japan, Singapore, and others. Through interactions with industry professionals during these professional overseas internships, you will gain insights into the practical aspects of entering the culinary or hotel workforce.

Culinary Arts and Hotel Management Concentrations

The Department of Culinary Arts and Hotel Management offers you the opportunity to work towards three different concentrations: Western Cuisine, Asian Cuisine, and Hospitality.

 

In the Western Cuisine concentration, you will have the opportunity to learn about Western culinary practices, food and beverage English terms, continental cuisine practices, and more.

 

In the Asian Cuisine concentration, you will have the opportunity to learn about Chinese culinary practices, Japanese cooking, Chinese wheat-based food production, and more.

 

Finally, in the Hospitality concentration, you will have the opportunity to learn about hotel management, hospitality human resource management, consumer psychology, and more.

 

In these separate concentrations, you will learn how to use the knowledge and skills developed throughout your coursework to work towards the industry and career you are most interested in pursuing.

In this program, no matter which concentration you choose, you will be required to enroll in 30.0 general education credits, 62.0 required credits, and 38.0 elective credits that interest you (18.0 to 19.0 credits, of which, must be department-specific electives), for you to graduate from the program.

Mandarin-Chinese Proficiency Requirement

Hungkuang University’s main language of instruction is Mandarin-Chinese, and we may require you to provide evidence of your Mandarin-Chinese proficiency to make sure your university education is a success.

We reserve the right to request a Mandarin-Chinese language test from any applicant. If asked to prove your Mandarin-Chinese proficiency, you must obtain a Chinese-language proficiency certificate at TOCFL A 2.

If you do not meet Hungkuang University’s Mandarin-Chinese language proficiency standards, we also offer students the opportunity to study Mandarin-Chinese in our International Foundation Program for a year before they officially begin their program.
